This book is an introductory nutrition textbook for students who are oriented towards science and health, aiming to provide additional knowledge and understanding in the field of nutrition and other fields related to health and disease. The increasing number of malnutrition in Indonesia, such as under nutrition and over nutrition, cannot be separated from the role of macronutrients in food consumed every day, so a more integrative understanding is needed to be able to overcome these nutritional problems.
This book consists of seven chapters, namely introduction, carbohydrates, proteins, amino acids, fats, fatty acids, and nutrient interrelation. Unlike other books, this book contains basic knowledge of nutritional science in the form of descriptions of each macronutrient detailed using basic principles of biology, physiology, and biochemistry. This book also explains food sources, nutrient needs in various age groups, genders and other special needs, as well as the impact of excess and deficiency of nutrients by referring to the results of recent research.
The last chapter explains the integration of metabolism of all macronutrients as energy producers so that students can more easily remember and understand as a series of metabolisms that occur in the body when consuming food. Nutrient metabolism is one of the most challenging subtopics for students that is closely related to its function and impact on health and disease. We also do not forget to add information about what programs have been carried out in overcoming the impact of malnutrition in Indonesia and other countries.
