This simple book was prepared and compiled with the aim of being used as a complementary material in exploring the intricacies of enzymes, especially enzymes that have a lot to do with food, food industry and food metabolism in the body. In this book, several topics are presented, especially the role of enzymes in general, enzyme classification, enzyme components, the role of proteins in enzymes, and the form and activity of enzymes. In addition, enzymes are discussed from several aspects, namely enzyme activity, active location, catalysis mechanism, enzyme kinetics, enzyme inhibition, and environmental factors that affect enzymes. Some enzymes that use the substrate of the main components of foodstuffs, namely carbohydrate, fat, and protein are also discussed specifically in this book. There is also a brief review of the safety and security of the use of enzymes for consumers.
