Food and Your Well-Being
In the past few years, food, nutrition, dieting, poisonous addi- tives, and environmental contamination have become hot topics of public conversation. Famine, sugar, eggs, cyclamates, and Red Dye Number 2 have all been in the news. Many people have changed their diets for fear of heart disease or to lose weight. The public exposure to food problems is carried on through many sources. Senator George McGovern, chairman of the Senate Select Committee on Nutrition and Health, stated in the committee's January 1975 report: "We have reached the point where nutrition or the lack or the excess or the quality of it may be the Nation's number one health problem. The threat is not beriberi, pellagra or scurvy. Rather, we face the more subtle, but also more deadly reality of millions of Americans loading their stomachs with food which is likely to make them obese, to give them high blood pressure, to induce heart dis- case, diabetes and cancer. In short, to kill them over the long term."
